So yeah. I might have had some chocolate cake at the wedding. Wonderful. Moist. Chocolate. Cake. And I might have also had some crawfish étouffée. And the best crab cakes I've ever had in my life. And well, you get the point. I ate gluten. It was SO good... And then it wasn't so great. Within an hour I had a subtle headache. 30min after that, I felt a bit nauseous. My husband did too, so I thought maybe it was something we both ate, but mine lasted several hours. And he later attributed it to the alcohol (he's not a scotch fan). So anyway, I wasn't entirely convinced...
Until today. I had a donut... and Taco Bell. An hour later, headache. An hour after that, nausea, which lasted 4 hours. Yuck. Oh, AND I've had some serious brain fog and tiredness starting at the wedding and into today.
(PS if you don't know what it feels like, I didn't either... The best way I can describe it, is to say that it's like having a glass of wine. It's that feeling just before you get buzzed. Except that you have that feeling when you want to be functional. I'm reminiscing about the clarity I had two days ago.)
SO, yeah, I'm declaring gluten sensitive. I know I should have gone 2-3 weeks off gluten before challenging, but given the results, I'm convinced. Gluten-free it is. I'm about to clean out my pantry.
