Things have been going pretty great for the last few days. Only one headache in the past 3 days and it only lasted a minute or two. I haven't made it back to the store yet, so I've still been doing baked potatoes with broccoli and cheese for lunches. I haven't noticed any big difference in how I've been feeling, but perhaps that's the key: I haven't noticed that I'm brain-tired, like I so often was... I still feel a little run down after bringing my dog to the vet and such, but even then, I'm able to function and think clearly.
I think I should mention that at the beginning of this experiment, I did look at my makeup to see what might contain gluten. My lip products and my tinted moisturizer both did. So I switched to using an organic CC cream from Physicians Formula and Moistureshine Lip Gloss from Neutrogena. Be warned: those were each one of very few products from each brand that did not contain gluten. I do think I've seen my face clear up substantially in the last week, however, it might just be related to my cycle. So I'll try to keep ya'll updated.
LS-wise, I went into this experiment with one tear, and it's still present. I also have a second, smaller one, which was caused by intimacy. So no staggering improvement there, but we haven't made it to the dairy trials yet.
DINNERS:
The last two night's dinners have been pretty rockin', if I do say so myself. Two nights ago, I made hamburgers in my oven (placed cooling rack on a cookie sheet at 350) and added sautéed onions, BBQ sauce, and A1 to the ground beef. My husband had his on bread, but I had mine on lettuce leaves with cheddar cheese. Last night I made BBQ bacon wrapped shrimp in the oven (using same method as above, but at 400). I wrapped my shrimp in bacon, using a toothpick to secure, then into the over til the bacon was cooked. Then I dipped each one in BBQ sauce (I used Sweet Baby Rays; naturally gluten free!!!) then back in the oven til the sauce was caramelized. YUM! There were no leftovers.

I'm headed to a wedding this weekend and I haven't decided how gluten-free good I want to be. I'm a sucker for wedding cake. So I may let myself slip for the night and take careful note of how I feel. I'll keep you updated!
