So this is my Dairy-Free trial... Day 4. It's been fairly easy to go dairy free as compared to gluten free. I feel like its just easier to identify on labels. Also I just got a juicer, so I've been juicing for breakfasts and snacks. I was, however, shocked to find milk in my taco seasoning...
How I've been feeling:
The headaches have been persistent over the last few days. Unsure if its just my sinuses or if its dairy related. I was also having nausea for the last few days in the evenings, but I switched from taking my medication at night to taking about half of it in the mornings and it's been better. I did forget my iron pills yesterday morning, and boy, did I KNOW it by 2pm. I got a shin splint first, then my calf started feeling weird, then my arm... and that's when it occurred to me that it was the anemia. Interesting that it was right-side dominant. I took my iron and everything went back to normal.
My Lichen Sclerosis is absolutely improving! I am so beyond excited about this. I've been taking pictures about once a week since going GF and my fusing is REVERSING! It's slow and almost imperceptible, but it's there. Getting tears is happening much less often too! And even when I get a tear, it's less painful, and it heals MUCH faster. I am so incredibly shocked and thrilled, not only that things are improving, but that I'm not putting creams with potential side-effects on my body. It just goes to show that I have to be in control of my own health. SO EXCITED!!!!
Now for the fun stuff: BIRTHDAY CAKE!
This Tuesday was my husband's birthday and so I grabbed a Betty Crocker Gluten Free Devil's Food Cake Mix! First note is that it only came with half the mix that a normal cake mix would. So if a normal box can make 24 cupcakes or 2 8x8 rounds, this mix could only make 12 cupcakes or 1 8x8 round. So I did have to run back to the store for a second box. Second note is that I substituted baby food prunes for the butter (1-1 ratio), so I wouldn't be breaking my dairy-free streak. Also on dairy-free, I discovered Betty Crocker Icing contains milk, whereas, Pillsbury Icing does not. I used Pillsbury's Chocolate Fudge Icing.
Overall: This cake came out SO good!!! I am so thrilled that I don't have to give up on taste to feel better.
